Fruity Breakfast Rice Vegan Recipe (scroll to bottom for recipe and pics!)

As I write this I am thinking I want more!
Hi!  I'm back.

I slept good last night and I woke up   this morning tired from going to bed so late.  I knew it was later than 0430.  I think I awakened around 0600.   I peeped out from underneath the covers later, I was trying to stay warm.  The picture of the bedpost is what I saw and I thought what a neat picture that

would make.  I looked at the ceiling thinking about this blog.  I knew I had to concentrate on my morning devotions so I prayed for God to help me concentrate on making Him first priority.


Normally this would not be posted but since I wrote about it, here it is.

So after I do my studies, I awaken and start taking pictures of the things that I am going to write about.  I'm thinking this is fun.  My husband takes a shot of me with my pinhole glasses on and my silk scarf wrapped around my head.  I sleep in this sometimes to keep my hair down.  Otherwise my bushy curls will dance frantically; wild and happy to be free.  Anyway, I don't think that he believes I would post such a picture of myself but I think I will.  Oh, I must mention that these are the colorful pajamas that my oldest daughter howled in laughter about when she saw me in them on her last visit home from college.  My pajamas may cause quite an uproar of laughter but they are quite comfortable and warm.  So I will gladly sacrifice fashion and popularity for them.

I don't think I listed photography as one of my likes.  It is!  I like playing with my camera especially if I can show off the photos that I take.  That is one of the fun parts of blogging.  It gives me plenty of excuses to use my camera.  It is a really cool camera my husband bought for me about 2 years ago.  I usually take it; a
Canon EOS Rebel XSi, with me most places that I go.  When I checked out VeganYumYum's blog, she inspired me to get into blogging and gave ideas on how to use my camera.  So I am finally giving it a try.  You will see pictures today!!

I washed my naturally curly hair this morning.  Oh, the ease of doing my hair now.  Unless you are and have African American hair, or you have to care for someone who has African American hair, you really can't appreciate what I am talking about.  Ever since I found Teri Laflesh's site tightlycurly.com, and read her book, 'Curly Like Me', I have been having a better life!!!!!!!!!!!!!!!  My hair is so easy to do now! I actually love my hair and it is no bother to do it anymore.   Currently, I am working on getting my 8 year old daughter's natural hair back.  I made the mistake of letting a hairdresser talk me into getting a relaxer in my daughter's hair.  "It will be so easy to maintain, and her hair will look so nice,"  she said.  I have regretted it from day one.  Her hair is high maintenance with the relaxer.  Once it grows long enough, I am cutting out all of the relaxer and then I will have easier days.  HaHa!  I can't wait!

Well this morning (technically, it is 12:51, so it's not morning anymore) I made an easy breakfast.  This is a fast breakfast that anyone can do that can use a stove.  It has fruit, rice and nuts.  You only need to cook the rice.  I like to cook the rice a day ahead of time so that breakfast doesn't take long at all.  The other day I served a friend this dish and he commented on how much he really liked it.  He called my husband the next day and commented during their conversation about how much he really liked the dish.  Here it is; my first recipe on the continuation of my first blog!  Exciting!  And totally vegan.  By the way, that is the only way we roll!


1 cup of cooked rice
1/8 - 1/4 cup of walnut cream (walnuts, dates and water blended until smooth and creamy - you might want        to make this ahead of time too)
about 1/4 cup of fresh fruit (I used pineapple this morning); a variety of fruit is delicious
a handful of raisins
a handful of walnuts or pecans
Cooked rice
a sprinkle of coconut
a teaspoon of fresh lemon juice


Chopped pineapple with a little leftover apple pieces
Walnuts, raisins and coconut

Leftover walnut cream, yummmmm!


Put all ingredients in a bowl; stir and eat.  Delicious!

This is one of our favorite breakfasts.  Sometimes we will eat this without the rice.  Even better!

Also, I wanted to let you all know that I am working on a stringy gluten recipe.  So far, no success.  I hope to have it soon.  If anyone has any suggestions for getting the gluten like this please notify me.  I will appreciate it.  I will be posting pics of the gluten that I made for dinner last night.  It wasn't the texture that I wanted but the flavor was really good.  I baked the gluten on low in the oven in olive oil, seasoned with fresh garlic and onion that caramelized as the gluten cooked.  I love the mixed flavors of olive oil, garlic and onion. It smells good too.

My First Blog!

I have so much to say and so little time to say it.

I started the day early at 04:30!  I am so trying to get on schedule, but it is so hard.  Especially when you don't make your scheduled bedtime.  Anyway, it is now 21:33 and I should have been in bed!

 I will have to start this again in the morning to let you all know about previous recipes and yesterday's try at a "mock chicken" seitan recipe I am working on.  My husband made our favorite Almond-Coconut Milk.  It's wonderful.

Anyway,  I will be back in the morning!
